广式月饼






回油以后表面不是看着很干了,油乎乎的,很好吃。看来虽然外表做的不是太好,实质上还算挺成功的呢。嘿嘿

月饼普:
第一部分:莲蓉的制作。

材料:莲子200G、砂糖60G、植物调和油60G。(莲蓉当然是油一点的来的香甜,但是自己做的,减少了砂糖和油的用量,味道更是清爽宜人)


莲子在凉水里浸泡3小时以上,浸泡好的莲子高压锅压到酥软,至少在10分钟。放凉后,加少许凉水,用食品料理机里的搅拌刀搅拌成莲子泥。

冷锅倒入十来克油,然后入莲子泥,倒入砂糖。开中火翻炒。

接着等油全部吸收后,再分次加入剩下的油。每次都要等油被完全吸收再加油。不停翻炒。

炒到浓稠,变干,汁水收到差不多关火。放凉,这就是传说中的莲蓉了。

第二部分:月饼皮的制作。

材料:转化糖浆150G、枧水2G,普通面粉200G、奶粉16G(我没单独买奶粉,直接把孩子的婴儿奶粉加了16G进去了,hehe)、植物油50G。

看一下转化糖浆和枧水。


转化糖浆:做转化糖浆的材料:白糖400G,即3杯水180G,1杯多一点。柠檬1-2个(榨汁取50ML)400G白糖,根据上面的换算表,就是3杯和 180ML水放在一个底比较厚的小奶锅里,稍微搅拌一下,然后就放一边让他们慢慢融和。这个时候准备1-2个柠檬。其实只要能炸出50ML汁就可以了。可 以用baby用的吃水果的那个小袋子挤几瓣就行了,我就用了不到一个柠檬就挤出来50ML的汁了。
把上面装白糖和水的锅中火煮开,煮开后放入柠檬汁,再次开后,转小火,整个过程是不能搅拌的...因为糖浆冷后会变干,所以要煮的比蜂蜜稀一点。中途如果 有糖在锅边上结晶,可以用小刷子蘸水轻轻刷一下,水就把糖冲下去了。如果糖浆颜色还不够,但是已经比较干了,可以加水。经验总结:我就是煮得太久了,冷却 以后都很硬了(看照片就知道颜色太深了),最后又掺水重新煮开,很麻烦,一般加入柠檬以后用小火(火候大小在1-2之间)煮40-50分钟左右看着糖浆成深色就关火,冷却以后应该不 会硬。硬的话就加水再煮。糖浆可以放到babyfood jar里面储存起来,需要放置一天以后才能用。而且做得这些用不完,这种糖浆耐腐蚀性强,不会变质,明年还可以继续用呢。

枧水:也就是碱水,用量很少。买不到枧水可以用使用碱面和水1:3的比例来调配碱水,用baking soda + 水代替枧水。baking soda 5ML一勺,水15ML一勺,配成碱水,用了1.25ML一小勺

取糖浆加入枧水。枧水用量很少,目的是中和酸碱,利于月饼回油,不太好取,我是用小针筒取的,比较标准。

枧水和转化糖浆搅拌均匀,然后加入植物油,继续搅拌均匀。注意一定要搅拌均匀,用打蛋的那种mixer搅拌比较容易一些。


粉类混合。 将搅拌均匀的糖浆液倒入粉中。 揉成团包上保鲜膜静置1个小时。这就是制作月饼的饼皮。


第三部分:月饼生胚的成形。

材料:咸鸭蛋黄(6个咸鸭蛋)、莲蓉、月饼皮(我这点量可以做成20个小月饼。)。

小小的说明:咸鸭蛋,对半切开。取出蛋黄备用即可。如果月饼模子小,一个蛋黄可以做好几个月饼呢。不一定非得一个蛋黄一个月饼。


取一份莲蓉,放上适量蛋黄。盖上莲蓉,揉成团。这里再说明一下,莲蓉和饼皮的份量比例是8:2,莲蓉比饼皮要多得多。其实这个比较难做到。。。技术性比较 强,我用的比例差不多4:2 汗。。。。包之前蓮蓉一定要團成一團,弄得圓圓的而且不可以用包包子的方法去包月餅哦.不然皮會太厚,不光不好吃,烤的時候還容易發脹變形的

取一份月饼皮,擀到很薄,把莲蓉球放在上面。整个翻过来,等于是月饼皮盖在上面,慢慢推,包住莲蓉球,这样皮就很薄,会很好吃。放入月饼模。用木头的要敲 打半天才出来,把面团粘点面粉就容易一些,但是还是需要敲打,我是在水泥地上敲打的,在桌子上会把桌子敲坏的。敲打出来用手托住,不要动侧面,放到烤盘上 不要在挪动了,很容易变形。

第四部分:月饼成品。
材料:生鸡蛋黄


烤箱预热356度。进烤箱,5分钟后饼胚成形,刷鸡蛋黄。然后再烤10分钟,或者更高(根据自己烤箱把握)。表面上色均匀,腰上成稍微鼓鼓的腰鼓形状就证 明好了。出炉放凉,不适宜马上食用。因为月饼有一个回油的过程。回油后的月饼比刚出炉的更香,颜色更深。这个回油过程在一个晚上甚至更长。回油后的月饼味 道就非常不错了。


做好了,要放一晚上回油了才能吃,所以还没尝味道,光看样子就已经很失败了,总结一下经验教训:
1。月饼模子太小了阿!千万别买这种三个的。做出来的是迷你月饼哦!太小了,用起来缩手缩脚让我很压抑。
2。用模子压形状的时候放点面粉,容易脱模
3。时间太短,鸡蛋黄没腌好555。以后来不及就买咸鸭蛋好了。不自己腌了。
4。菜谱上写的温度180度,烤了半天还是软的。弄到350度才起作用,所以温度不能尽信书。得根据自己烤箱的具体情况定。
5。一开始不要刷蛋黄液,放烤箱烤5分钟以后,硬一点了再刷,要不然花纹全被刷没了,555
6。莲子蒸的时候用高压锅,书上写10分钟就好,结果后来发现10分钟以后还是有点硬,但是发现的时候太晚了,都已经搅拌机搅碎一般的时候了,就将就着了。看来还是不能全信菜谱,得根据实际情况阿。

豌豆黄--做好了不是特别喜欢吃


去皮乾燥黃豌豆1磅(約450g,2又1/4杯),水5杯,小蘇打(baking soda)半
小匙。 水5杯,砂糖根据自己的需要来加。


做法:
1. 豌豆洗淨,加入水5杯与小苏打一小匙,静置五到六个小时。

2. 用清水漂洗豌豆4~5趟,沥干水分,移至鍋中,加水5杯煮開。沸騰撇去白
色的浮沫。然后转中火继续煮到豌豆熟烂。
3. 用滤网过滤豌豆糊,不过滤也可以,就是口感上没有过滤后的细腻。
4. 加入砂糖拌勻,如果有奶粉,再加奶粉,味道会更香。
5。移到火上加熱,继续煮到豌豆糊浓稠,感觉上用勺子舀起来成块状掉
落就可以了。
6. 用方形的容器乘装,底层用保鲜膜铺好,倒入豌豆糊,上面再盖上保
鲜膜,用刷子或者木头平铲推平。放冰箱里冷藏四到五个小时,拿出切块。

吃时,搭配山楂糕,味道很不错。

发面葱油饼

Integrate:

1大匙=15毫升,1茶匙=5毫升。

做法:
盆内放入1料的面粉和泡打粉拌匀(图A)后加入2料(图A)揉成软面团(图B)。然后加玉米油1茶匙,揉均匀(图C),放在暖和的地方保温保湿,等到面团发至原来的两倍大(图D)。

把发好的面团稍揉下成圆饼状,擀成圆方形厚0.4厘米的薄皮,放上香油,再均匀撒上3/4茶匙的盐,白胡椒和鸡粉,为了让调料均 匀,可以将面皮一端拉起盖到另一半上(图H),稍拍两下,不同角度重复几遍。均匀撒上葱花,叠宽条,两头叠向中间,最后 叠成正方形。这样做饼的层次均匀。用手把方饼四角往中间推推,然后擀开些,放上芝麻(图M),再把饼擀成直径28厘米的薄饼,放入28厘米的盛 1.5大匙橄榄油的里,醒15分钟。置炉上开中火,煎3分钟,然后翻一面再加1大匙油再煎2-3分钟,至金黄即可. 切块食用,非常好吃。


南瓜饼



简单过程:
把南瓜去皮,去瓤,切成比较大的块上锅蒸,蒸差不多20分钟,等到都蒸透了停火。
拿出南瓜放在盆里捣碎,这时会发现有很多水出来。加糖,根据自己爱好。
往南瓜糊里面加糯米粉,我是为了让南瓜饼不是太粘还加了一些大米粉(粘米粉)。比
例是糯米:粘米=2:1。 加粘米粉也有助于最后成型。
等粉加的差不多可以和成面团就好了。

喜欢吃馅的就在里面包红豆馅,不包也可以,搓成圆球,然后再上面划几下,弄成南瓜
的样子。柄我用的红豆。

上锅蒸15分钟就好了。

莲蓉酥 君之

托朋友带的月饼模还在路上,先做个莲蓉酥练练手,为将来的蛋黄莲蓉月饼做好准备。

方子出自君之,具体步骤copy如下:

莲蓉做法:
1、莲子洗净,浸泡3个小时,然后将莲心取出(如果是已经去芯的莲子可省略这步)。
2、洗净,去芯后的莲子,用小火煮2-3个小时。要煮到用手轻轻一捏就成泥状。
3、将煮好的莲子略凉,倒入食品加工机,再加少许水,搅拌两分钟,搅烂成莲泥。
4、搅拌好的莲泥,入锅,加入砂糖,开中火,不停的翻炒。并分三次加入植物油,每
一次都要等莲泥把油完全吸收以后再加下一次。炒到莲泥变浓稠,起锅,即成莲蓉。

莲蓉酥的制作:
1、把60克黄油隔水加热使其融化。
2、融化的黄油加入40克水,150克中筋面粉,40克砂糖,揉成光滑的水油皮面团。静置
20分钟 。
3、把45ML植物油和90克低筋面粉混合均匀,揉成油酥面团。静置15分钟。
4、把静置好的水油皮面团揉成条状,切成16等分。
5、把油酥面团也切成16等分。
6、取一个水油皮小面团,用手掌压扁。
7、放上一块油酥小面团。
8、把油酥包起来,收口向下。
9、用擀面杖擀成椭圆形。
10、从上往下折1/3。
11、从下往上折1/3。
12、折好的面团收口向下,再次擀成椭圆形。
13、重复第10-12步两次。
14、擀开,放上一块莲蓉。
15、包起来,收口向下。
16、表面刷上蛋黄液即可入烤箱烤焙。390度华氏,25分钟。
