Ingredients: (Can make 5 bread)
bread flour 140g (Bread flour makes a superior loaf. This flour is higher in protein content, and protein, or gluten, is what gives bread its unique texture.)
water 80g
yeast 1teaspoon
Sugar 25g
Salt 1/4 tea spoon
milk powder 6g
unsalted butter 15g
Fillings:
redbean 125g
Toppings:
egg (mixed Yolk and white).
Baking:use the middle level of the oven,300degree,around 15minutes,till the toppings become yellow.
1、根据一般面包制作方法,把所有制作面包的材料揉成面团,揉至能拉出薄膜的扩展阶段,在室温下发酵到2.5倍大(28度的温度下需要1个小时左右),把发酵好的面团排出空气,分成5份,揉成小圆面团,进行15分钟中间发酵。详细的揉面及发酵步骤图点这里查看。
2、取一个中间发酵好的面团,按扁,包入25克红豆沙。
3、包好红豆沙的面团,收口朝下放在案板上,用擀面杖擀成长椭圆形。
4、如图4所示在长椭圆形上竖切4刀,头尾不要切断。
5、切好的面团,捏住两头,如图5所示扭起来。
6、把扭好的面团打一个单结,如图6所示。

7、把打好结的面卷放进直径10CM的面包纸托内。依次将所有面团都整形好以后,放在温度为38摄氏度,湿度80%以上的环境下进行最后发酵,直到面团变成原来的2倍大(约40分钟)。
8、发酵好的面团表面轻轻刷上一层全蛋液,送入预热好180度的烤箱,烤15分钟左右,到面包表面变为金黄色即可出炉
